Absolutely delicious chicken patties and apt for lunch boxes... Take this simple recipe and enjoy the new flavour !!!

Ingredients:

400 gm minced chicken
1 Tblsp coconut oil for fry
1 egg
1 1/2 tsp ginger garlic paste
1 medium onion chopped
2 Tblsp chopped coriander
2-3 green chilli chopped
1 Tblsp chicken Tandoori msala powder
1 Tblsp coconut flour / Almond flour
salt as we required

Direction:

In a large mixing bowl combine minced chicken, ginger garlic paste, onion, green chilli, coriander leaves, Tandoori masala and salt blend well with a spoon.

Add egg and fold it nicely until it coated well with the chicken mix.

Add coconut flour or Almond flour to make the mixture thick.

Divide the mixture into small portions and make each part as a small flat patty.

In a frying pan pour a small amount of coconut oil and shallow fry the patties.

Once the bottom side of the patty turns golden brown then flip it to brown the other side.

Better cover and cook the patties.

Serve hot with some green salad and mayonnaise or ketch up.

INGREDIENTS

Oil-4tsp
Mustard-1/4tsp
Urad dal-1/2tsp
Red chilli -1
Curry leaves
Onion-2
Tomato-2
Green chilli-1
Chicken-750g
Chilli powder- 1 and 1/2tsp
Turmeric powder-1/4tsp
Coriander powder-1tsp
Red chilli-5
Cloves-4
Cinnamon stick-1
Fennel seed-1/4tsp
Cumin -1/4tsp
Coriander seed-1 and 1/2tsp
Fenugreek seed-4 to 5
Black pepper-1/4tsp
Salt
Coriander leaves
Coconut-5tsp

Now lets see the steps to prepare chettinadu chicken curry:

- First we will see how to make masala

- Take a pan and add curry leaves, dry chilli 5, fenu greek seeds 4, fennel seeds, cumin, cardamon sticks, krambu, pepper, coriander seeds and coconut.

- Toast them dry for a minute and keep it aside

- Now in the same pan add little oil and fry mustard and urid dall, then add curry leaves and remaining dry chillies to it.

- Add the onion and cook for couple of minutes

- add the ginger garlic paste and cook till the raw smell is off

- Now add the tomato and cook for couple of minutes

- It is time to add the chicken and cook for few minutes so that the chicken mix very well with the masala, now you can add little water and cook it for 4 -5 minutes

- add all the masala powders now to add the flavour to the chicken curry

- mix it well and leave it till it cooks for 10 mins

- While it is cooking grind the dry masala that we prepared in the mixie and add it to the curry.

- cook it for few more minutes 4-5 minutes

- Now add the coriander leaves and serve the chettinadu chicken curry hot.

- It goes very well with plain rice.
