Paleo Banana Bread | Paleo on the go












so what we're going to use for our banana bread today is pretty simple recipe is for bananas 1 2 3 4 this one is a little bit less ripe than we would normally use but we just want to make it and we've got a teaspoon a heaping teaspoon of baking soda this is a one-third cup of coconut oil melted quarter teaspoon of salt and it was a teaspoon of vanilla extract there's a high quality camera not doing anything that's he's teaspoon and a half of cinnamon half a teaspoon of nutmeg half a cup of coconut flour 4 eggs what else anything else that's it you'll also need like a spoon because we're going to put the banana bread a little cook piece single-serving guys so it's not real scientific basically just going to throw everything in all at the same time look at this candy one-handed eggs okay just going to add everything all at the same time and mix it all together to make the batter there's probably a better way to make banana bread but um I don't know it I'm sure somebody who is out there who might be watching I'm sorry if this offends you my cooking style but the point is just to show some easy stuff that we can make just toss that in using overripe bananas because they're a little bit more sugary I guess and that's what you get your sweetness in the bread from we don't add any sugar to this recipe and you can see in here like I wouldn't really eat that banana normally like not in the morning when I wake up have a quick banana I wouldn't eat one that's that that right so we've added all the ingredients to the mixer and we're running it and bear in mind if you're watching this you don't have to have some fancy shmancy stand mixer we bought this thing years ago probably we shouldn't have because we don't use it all that often but we use it to make this and you know basically I just let this thing go until it's all whipped up you know like I said there's probably a better way to make this food but this usually tastes good and maybe consistency is off or something but I wouldn't know I'm not a chef so anyway you can see it's sort of starting to become a batter there I've actually forgotten to do this before but uh you know then I the last step is I just drizzle in the oil it's not too hot because I've been letting it cool it's not going to cook the egg but you know I just let it go in and then I let it whip up a little bit more and once it's done me add it to our cupcake you can tell these videos are going to be very very technical I guess that's part of what we're trying to help everybody with though is you know you don't have to be some sort of like trained person to make good food and to make stuff for your family they're going to like and it's going to be healthy it's pretty simple to just throw a few things together have yummy food that you don't feel guilty about eating like you know I'm gluten intolerant really messes with my insides just sort of why we started to go down this path of like there it's probably a little less clear you know paleo ish food and I would always start to crave something sweet and I get like a gluten free cookie or something was like man I shouldn't eaten it but these things you know you're eating bananas and coconut flour and it's delicious probably better than those little cookies that you find at the store so you can do things like this this whole recipe doesn't I mean you get a whole batch of banana bread cupcakes out of this for you know three four bucks so it's a much better deal set up three or four dollars for 103 cookie you got a whole batch of an ant bread that you can just laugh so anyway we really like this my daughter loves it she's always asking for Nana bread all right so we're ready to oh look at that there's already bacon in there that's perfect so we got exactly 12 muffins throw that in 350 degrees Oh gracious usually takes about 45 minutes or so what are you gonna eat in a second here is it yummy Hey look at me please hey do you like you can banana bread mm-hmm what's your favorite thing about it your name is your favorite thing cool okay so i finally got it out there not graceful we'll just sort of check it to make sure it's minute he's always like a fork than all right insist that it's finished yeah looks good all right so that's it when they're they're yummy they come out really easily when you use the silicone pads or baking things which we have had for years and but you can do it in a normal metal one anyway so enjoy I know I will I know my daughter will .

Banana Date Bread | Vegan, Paleo, Nut-Free, Oil-Free












hi everyone in today's video I'm going to make banana bread and muffin tops with bananas and dates being the only sweeteners the recipes are plant-based grain free not free and oil free so as I already mentioned the only sweeteners here are bananas and dates Adam to a food processor or a high-speed blender together with vanilla extract and blend until smooth when I'm making banana bread I like the texture to be completely smooth so I use a high speed blender the muffin tops on the other hand have a better texture from a food processor in my opinion you can try both and see what you like now I'm going to make only one batter in this video even though I'm making two recipes because the recipes are almost identical however there are a few differences so make sure you refer to the actual recipe you want to make the links will be in the description box below the next ingredients are quinoa flakes you could use rolled oats chopped pecans they were totally optional you can use chocolate chips seeds or any other add and you like baking powder and salt pause the mixture a few times until the quinoa flakes are well incorporated and I know I'm going to get this question so I'll answer it in this video yes my food processor is clean after blending the bananas and dates and that's because I film while my kids are napping and they tend to wake up when I turn the food processor on and when they wake up I don't want to film anymore so I put everything away and start from where I left off the next day alright back to the recipe once you have the batter ready you can make little muffin tops these are more like breakfast cookies regular sized muffin tops or banana bread and that's it banana Bert and muffin tops that are moist tender Hardy and make for the perfect breakfast snack or dessert I have to admit that I kind of cheated for this test because I made this banana bread and banana muffin tops with quinoa flakes and my kids loved it I liked it but Tanner didn't and so I swapped with the quinoa flakes for regular oats for Tanner way Jenna seems to prefer it's really good I think that the quinoa was not neutral at all there's certain dishes that Petric can sneak Pino into and I really like them but this was not one of them so I like quinoa so I liked it but tena doesn't like quinoa you should know that he does not like you know it is a very overpowering flavor like it it overpowered the banana flavor in my opinion in this case not in all cases like like I said it works in some dishes but not in this one in my opinion this banana bread tastes like a very familiar flour egg based banana bread which is what I like about it it is very familiar so if you have people in your house they're you're trying new dishes this is a good one to do because it is very like it just seems normal just like normal banana bread however it is not as soft and pillowy to bite into as a flower based egg based banana bread it's still moist soft and all of that stuff but it's not as soft as a normal banana bread the texture the thickness the density it might be slightly more dense there's nuts in here as well so depending on how you like it yeah that's the next batch we're gonna do that so I think if you had some butter whether that be vegan or dairy based it would taste really great on here and it's very familiar so it's a really good recipe alright so I hope you enjoyed this video if you did please give me a thumbs up comment below subscribe to my channel and I'll see you next time .
