Typically, when you think fried chicken, you don’t think of paleo. However, this almond coconut crusted fried chicken is a paleo chicken recipe that is perfect for cooking with ghee. In this video, Rachel shows you how to prepare this delicious coconut fried chicken!

INGREDIENTS: 2 boneless, skinless chicken breasts 1 egg 1 tbsp. Dijon mustard 1/8 tsp. cayenne or chili pepper 1 pinch sea salt 2 pinches garlic powder Ground-up almonds Shredded coconut 1/2 inch PrimalFat Coconut Ghee
INSTRUCTIONS: 1) Crack egg into bowl and mix with Dijon mustard, cayenne/chili pepper, sea salt and garlic powder. Whisk together. 2) Coat the chicken in the batter you just made on both sides, completely covering the chicken. 3) Take equal parts ground-up almonds and shredded coconut, with another pinch of sea salt, and mix it all together. 4) Spread the coconut/almond mix, and dredge it over all sides of the chicken. 5) Take at least 1/2 inch of the ghee and place it in a pan that has already been preheated to medium-high heat. 6) Place the chicken in the pan, making sure you hear the chicken sizzle as it comes into contact with the oil. Let cook for about 2-3 minutes on each side of the chicken, waiting until it is a nice golden color before flipping. Prep time: 7 minutes
If, after the seven minutes, the middle part of the chicken is still a little cold and not all the way cooked through, place chicken in an oven heated at about 350 degrees Fahrenheit for about five minutes.
An unbelievable recipe that's already a fan favorite. Today we're making it in the slow cooker. Check out this super delicious, all meat, no bean, paleo chili bowl. (upbeat melodic music) (bouncy playful music) This low-carb chili goodness is made thanks to one simple appliance, the slow cooker. When it comes to chili, I've always preferred more meat and fewer beans, or no beans at all.
Now this is one recipe the whole Fuentes family loves, and many families in our MOMables community. I've already made this video with the chili on the stove top but you guys are always asking, "How can I make this recipe in the slow cooker?
" So today, I'm gonna totally show you. So if you're doing low-carb or paleo, you can still enjoy a huge bowl of chili, because no beans. So now that I dicing the zucchini, I'm gonna heat some oil in a large pan and break up my beef and onion. I'm gonna break up the meat with a spatula, and brown it until it's cooked through.
Now while that's cooking, I'm moving on to my celery and carrots. Now another great thing about this recipe, is that it's loaded with veggies, but they get cooked down with the spices and the beef, so even the kids can enjoy it, and they get a double serving of veggies. Now in the slow cooker, the zucchini will cook down really soft, so a lot of people, what they do is they save the zucchini for last and they add it in in the last hour. So that's definitely an option. By the way, this is also a great recipe to meal prep the night before.
Put it in the slow cooker in the morning, and when you get home from work it's so ready. Okay, so now that the beef is ready, and all my veggies are chopped, we're just gonna put everything in the slow cooker. Then the celery, carrots, chili powder, cumin, oregano, cayenne pepper, salt, zucchini, tomato puree, and diced tomatoes. We're gonna give this a quick stir, cover it, and we're gonna set it to cook on high for four hours, of six hours on low. This chili smells incredible.
Seriously guys, do yourself a favor and make it. You're never too busy to make this recipe, and leftovers, oh my gosh, they taste even better the next day! So let's ladle some up in a bowl. Now I treat this like other chili and add some shredded cheese, a dollop of sour cream, and some avocado. So hearty. It's really got robust flavors.
