Crispy Chicken Wings (Baked not Fried!!) Gluten Free, Paleo & Whole30 | Episode 15












what's the word for that - that is not working - hi everybody welcome to health coach TV I'm Alex and this is the show where I show you how to cook healthy food that doesn't suck today we're going to be making some crispy chicken wings they are going to be spicy they are going to be delicious and they're also going to be paleo and whole 30 approved can it get better than that?

it is possible to have crispy chicken wings without breading and deep frying it i promise you're gonna see - the things you're going to need for this recipe are a pound of organic chicken wings salt baking powder Korean chili flakes or paprika hot sauces of your choice that's it it's really easy I promise so take your chicken and the first thing you want to do is like dry it off it was very moist when they took it out of the bag always make sure you buy organic please please please please please for so many reasons but I just think it tastes better too so our chickens is dry we're going to take our baking powder put two heaping table spoons into our Bowl the reason that we're using baking powder is that it has this weird chemical reaction with the skin of the chicken that's how it gets crispy - science so now I'm going to take my pepper flakes and I'm going to do one regular sized tablespoon of that we're going to be adding a little hot sauce at the end too so I don't want to overpower it before we even get started and salt and then we're just going to mix this up I got dust flying everywhere add your chicken this goes immediately to get cleaned and mix it up now the funny thing that you're going to notice is that when the chemical reaction starts to happen you'll actually hear it you can hear it's like a snap crackle pop you can actually hear it happening it's pretty cool it's like sizzling okay so now we have some really dry unappetizing looking wings you're welcome what do we need to do now now I need to line a baking sheet because the less cleaning we can do is always the best amount of cleaning zero amount of cleaning is the best amount of cleaning you want to take a rack and put it on top of your sheet if you have a rack and a pan that actually fit together use those mine is slightly makeshift pre-heat your oven to 425 degrees I'm going to toss these one more time there's definitely some extra breading left at the bottom which is fine but if I can get a little bit more on there's nothing wrong with that either just take your wings and lay them out on the baking sheet I don't think it really matters which side up which side down some are drumstick some are wings but you want to give them all a little bit of room some space to breathe so that the heat can get all the way around them make room for your friends they're coming to the party so we've got our wings all ready going to put it in the pr-heated oven for 20 minutes then we're going to flip it another 20 minutes flip it again and then keep cooking it that way until it's done it's been 20 minutes let's check on our wing always use protection okay these look really good so far they're starting to kind of crisp up on the bottom side so they're still pretty dry on both sides but what we want to do is flip them all over so that both sides get cook evenly you'll notice the side on the bottom looks a little bit less white and powdery and the side on the top still looks pretty much exactly the same as it did when we took it out of the bowl but that's okay we still got some time to cook so now everything has been flipped throw it back in the oven for another 20 minutes in ya go buddies we've got a couple minutes until the wings are ready so in the meantime we're going to get the sauce prepped that we can toss the wings in the sauce when they're ready duh the typical buffalo chicken wing sauce is a whole bunch of melted butter with just a bunch of hot sauce why add all the butter and extra calories and cholesterol go right for the flavor get that hot sauce on there in this bowl put a bunch of hot sauce I told you this recipe is dead easy so just for the sake of it I'm going to measure for the first time ever on health coach TV we're using measuring devices while cooking isn't this exciting ok so I put about half of a corner because Frank's and now i'm going to put the rest in just regular tobacco any vinegar based hot sauce is good both Frank's and Tabasco are paleo and while 30 approved really what that just means is that there's no sugar in either of these our incredibly complicated sauce has been assembled and now we just wait for the chicken wings to be ready what's the internal temperature of a cooked chicken wings thank you google 180 degrees Fahrenheit when those chicken wings come out of the oven we're going to test them if they're 180 degrees Fahrenheit then they're done if not we'll throw them back in the oven for a little bit I don't know where my thermometer I'm in 13 seconds hmm hello let's do this so as you can see these all have a really nice crispy skin on them which is amazing I'm going to get into the chicken wings whenever you're cooking meat you always want to check the internal temperature because that's really the only way that you're gonna know that they're done and these are definitely done coming in at like over 200 degrees way more than done perfect no food poisoning from me so we're just going to take our chicken and put it right into our souce maybe i should have greased this first some of them are coming out fine and some of them are a little bit sticky so all of the chicken into the cause bowl it's pronounced sauce not sauce like you might think then we're going to toss them up literally oh god I'm wearing a white shirt I can use utensils instead of flare even though my flare is mad strong these look pretty tasty I always woah saved the shirt saved the shirt okay I need a bigger bowl all right take 2 these look really good and they smell really good you could add more hot sauce if you want *cough* that's like potent check them out they look like awesome chicken wings don't they look amazing these paleo whole30 approved chicken wings are absolutely delicious they were dead easy this recipe it's got like no ingredients in it you're going to WoW everybody they're gonna be like wow did you order those from a store I made them from scratch no way way I totally made What is the Paleo Diet? The founder of PaleoRobbie answers












so the Paleo diet is it's constantly evolving I would say it's I mean everyone has read something about it right so it's it's basically the notion that we have evolved and we have been eating as hunter-gatherers for most of our evolution and we only recently started introducing and industrially produced foods processed foods and things like that and so our bodies are not well adjusted to them that's kind of like the idea that that's behind the framework and whether that's 100% accurate or not doesn't really matter to me personally so the what why I would follow why I would recommend the Paleo diet is very simple you are going to be guaranteed to eat foods that are healthy and it doesn't mean that's when something is not paleo is by definition of healthy but when something is paleo it's probably quite good for you and and the reason is that paleo consists of vegetables nuts fruits healthy meats and wild caught fish now there's nothing wrong with with any of these foods and so if you would focus your or your diet around these then you're going to be in a good shape so I would I would consider it a framework and not more and not a Dogma or anything like that so there there you can obviously deviate it from a little bit so to a certain degree but it's just useful on daily life when you go to a restaurant and you want to know what you should eat in terms of health you can use this idea of like what is available you know like it is vegetables disappered so in that sense I think it's it's a really cool cool idea and that's why I decided to follow it myself as well because it's easy and it's and it works and so what did what I mean by it works is I've tried pretty much every diet Under the Sun when I was overweight so I went for the conventional thing first and I took my milk and I replace it with soy milk I started eating whole grain breads and things in that you know I felt worse I have never felt that bad and vegetarian - vegetarian for a while didn't work either at all like it's it's in fact you have less energy tarek daily migraines things on them and so the reason I got to paly us because my brother was here in Bangkok actually and he first started to pay it off him and he convinced me after also hey try this I said no way man people who don't eat bread bread as hell feeling like everyone eats bread like things like that right and I grew up eating that so there's nothing wrong with it so that you you guys are like an extreme segments in in the terms of diet and I'm not gonna do it but in the end I got a bit desperate so I was like why not I'll give it a shot you know like he's running triathlons and I'm here sitting in front of an office desk so maybe there's some truth to it and I went quite straight and and I lost 45 kilograms and in the first eight months or so without much effort I was like okay and I've never felt better so what I mean it would it works it's like you go back to your natural weight if you if you eat quite well you have more energy you're more focused and you're just a happier person in general and then again the health impacts pretty much everything in your life so it's it's important to be reasonably healthy the Paleo diet works for for people who for pretty much anyone really so if you're a busy in the office and you're you're you're working long hours you already compromised me off a little bit by sitting in front of the computer or anything like that indoors and so you need to focus on your diet and because if you don't you will you will notice like you start slacking off you you'll become less motivated and when you're not in good shape here are your works going to suffer as well I mean it's that's quite obvious so you need to have a reasonable health baseline now say so and I think the Paleo diet is is great for them so it's very compatible two to two to achieve that so I but I would have to stress period is not the only way to do there there are many other ways to to get to reasonable health as well and I mean you can even be a healthy vegetarian I would just say it's gonna be a lot harder if you want to be a healthy vegetarian you need to be really careful about what you eat I need to like plan it very well whereas with the paper that you can and just wing it I mean if you if you eat a bunch of vegetables and meat you're good like there's there's there's not much more to it so and that way is I think for people who are busy I think that's a good way to do .

today I'm gonna share with you one of our new food finds that we are absolutely loving in our house we tripped up on this at our local Walmart in the frozen food section and just kind of took a chance and bought one of every product of this brand of food and have absolutely loved everything that we've tried so this is a paleo brand of food and by no means are we a paleo family but we're always looking for new healthy and tasty foods to implement into our family's lifestyle so the first thing that we tried that we were super excited about was the paleo sandwich bread now the company that makes this is called base culture they started this company and they meaning women it is a woman owned company which I'm always super excited about supporting so it's a woman hound company the lady who started this company actually did a 30-day challenge with her friends to see if she could go paleo for 30 days and the end result was this amazing company base culture so all of the products are paleo they are soy free gluten-free non-gmo all the things that we're looking for were implementing healthier foods into our lifestyle Michael and I have absolutely loved having the option of bread again in our life we've gone a very long time without it we have been using this for avocado toast when we break our fast so we just put two pieces of this bread and the toaster we top it with some avocado a little bit of egg maybe a little bit of bacon it is absolutely delicious it toasts well and holds up well also I know a lot of times when you're looking for a gluten-free bread or a healthier version of bread one of the biggest complaints is that the bread does not hold up that is not the case with this bread it has been working great for us gabby loves it as well she puts a couple pieces in the after school spread some all natural peanut butter on it and she has herself a nice healthy bread option for an after-school snack so this is what a slice of bread looks like it's pretty small it's perfect for putting some avocado on it and maybe putting an easy over egg on top or maybe even smashing a hard-boiled egg on top for like a little bit of a spread so it's perfect I have to when I have my bread absolutely love it totally satisfying and then that company also makes some pretty tasty treats as well so we have also been enjoying the almond butter brownie this is super tasty I'll insert a picture of what this looks like outside of the package we cut this in four pieces and each one of us has a piece totally satisfying it'll cure a chocolate and a sweet craving for sure again in paleo lutein free soy free great option for an ugly snack and then we've also found their nutty pumpkin bread this loaf of pumpkin bread is eight servings so we just kind of slice it up in eight servings and then divvy it up it's been a great after-school snack also a great dessert idea if you have company over super easy to slice this up and serve it we have tried it just plain like this out of the package and we've also tried it with a little dollop of our coconut whipped cream awesome little treat your company will love and they won't even know that you're serving them something healthy so I've reached out to this amazing company and I let them know is gonna be sharing their products with you here in this community they were super gracious to offer all of us a 20% off discount code I will link that below in the description like I said I found ours at our local Walmart but when I went on the base culture website I noticed they have a lot more products than our local grocery store offers so I will be purchasing more products and trying them from their website directly I will be using the coupon code and saving myself the 20% and I hope you will do the same if you go in and decide to purchase some of the base culture products please reach out to me and let me know how you and your family are during them as well .

Paleo Shrimp Taco Tuesday












welcome back to where kevin brady's mostly kitchen this is uh shrimp tacos and what we've learned is to record a backup so if we're not looking directly at the camera or the light looks a little weird that's because the backup had to be we had to use the backup so we made these last week they are awesome um the shrimp themselves come from wow the shrimp marinade the shrimp marinade comes from nom nom paleo which is basically i doubled the recipe so um i used their half a cup of avocado i used half cup of olive oil i used two tablespoons of dried organic or dried oregano excuse me two garlic cloves and or i doubled all this so four garlic cloves and then zest from two limes i never thought i would be zesting anything my favorite is that you leave the limes on the counter after they've been zested just hanging out like what are we gonna do with them now they just sit around on the counter for a day so uh this week i have to put the link of the recipe yes uh which actually i already sent it out because it went with the week's menu yeah but there weren't very many people that wanted it well it's on there too bad for them so a plug if you want our menu then give us your email address go to our website giving radio kim and brady's mostly paleokitchen.com sign up and you'll get them every week so i've been zesting limes i've been sweating zucchinis you've had a good week man not a good week it's been awesome for me because basically i get home from work and he's doing all the hard part what are we having what's in our tacos okay the best part about these tacos is i just buy everything sometimes we recognize we are busy people we don't i don't have time to be making all this homemade stuff all the time so guess what coleslaw which is all that's in this is cabbage and carrots i made the mistake when we say coleslaw i think some people think of like legit coleslaw and base or something it's just the veggies okay our favorite brand of guac actually to dip with chips just because it's nice to have a little side and then mango salsa you want to pull me close so you support me in the camera um you were like half off the camera pulled up the mango salsa then one day no sugar yeah sweet chili sauce bell peppers mangoes tomatoes chili peppers garlics salt it's good for a week in your fridge and the most important part is definitely the tortilla so for the tortilla like i said i told it a million times before just be sure you crisp it up a little bit in your skillet make the texture awesome and that's it we're gonna go eat eat dinner thank you peace out you .

I cooked the shrimp with the marinade in my favorite cast iron skillet, big bertha. We then lightly fried the tortillas in avocado oil, rationed out the shrimp per wolf, per tortilla, (otherwise they would have not lasted), slathered on the guac, tossed in the slaw, and added a dollop (I love that word) of salsa and BAM! Taco Tuesday was a seafood fiesta in my mouth!

Paleo Bread Recipe
INGREDIENTS
4 eggs
2 tbsp honey
2 tbsp coconut oil
½ tsp sea salt
1 ½ cups almond flour
1 ½ cups arrowroot flour
1 tsp baking soda
2 tbsp apple cider vinegar

PREPARATIONS
1. Preheat oven to 350 F degrees.
2. Mix dry ingredients in a mixing bowl.
3. Whisk together to get rid of clumps.
4. Combine wet ingredients in a separate bowl and whisk.
5. Slowly add wet ingredients to dry.
6. Blend with a hand mixer.
7. Line a loaf pan with parchment paper.
8. Then pour in batter.
9. Bake at 350 degrees for 30 minutes.
10. Check for doneness with a long skewer or toothpick.
