hey guys we're going to even up the score on the recipe index we've got a lot of protein but we need some more veggies so there's going to be a carb slash veggie side that we can pair up with some meat it's going to be oven roasted carrots and parsnips Oh it came to pull out a piece of plastic wrap here let them peel my parsnips onto it parsnips are peeled guys we just take our plastic boom roll that up like a ninja right Ninjago boom then here we'll cut the ends off alright and then the idea we're not going to peel the carrots all we're going to do is by text them cut them in half like that so we want parsnips to be a similar size I've cut all of our carrots in half we've got a nice variety of colors to go with our white parsnips and now distribute them onto the sheet pans I got foil lined sheet pan to see that makes for easy cleanup then a drizzle olive oil salt kosher salt right pepper and then time I like time I think it goes well with carrots some bunches and this is going to cook way faster than the carrots will but it'll just kind of infuse a little bit of flavor by being next to it okay how's that looking looking good all right there we go guys is it going to go in the oven at 375 degrees there's our carrots and parsnips guys just took about an hour last ten minutes I bumped it from 375 up to 400 we got some beautiful stuff going on I like this one right here shiny carmelization go go my handyman all right guys we're plated up here I'm just going to garnish one little bunch of time in diagonal corners full boat just like that so we garnish this up with some fresh thyme and that's relevant because we roasted it with thyme does that make sense keep that connection going this has been my oven roasted carrots and parsnips it's a great way to get some more veggies in your life so get out there cook this up and we'll see you next week you you .
