Paleo / keto Aglio Olio | Paleo / keto Pasta | பேலியோ இத்தாலியன் பாஸ்தா | zucchini pasta

Aglio olio is one of favourite dishes in Italian cuisine, which means “garlic” & “oil” in Italian.
Originally its a plain pasta. However we add seafood, mushroom to the basic Aglio olio to make more complete meal.
I convert this into paleo/ keto using zucchini in place of noodles.

Ingredients:

1 large zucchini
1 1/2 Tbsp olive oil
2-3 garlic minced
1/2 tsp pepper powder
1/2 tsp chilli flakes
1/2 tsp parsley dried
1 Tbsp parmesan cheese powder
Salt

Direction:

Wash and peel the skin of a zucchini.

Cut lengthwise flat strips using a vegetable peeler or spiralizer.

To remove the excess moist in the vegetable sprinkle a tsp of salt and let hot rest for 5 mins.

Squeeze the vegetable and spread it over a clean towel for a while.

Heat olive oil in a pan and add garlic sauté for 3 min until it turns slightly brown.

Add pepper and chilli flakes and very ltl salt then add the drained zucchini noodles into the pan , stir gently.

Continue for 30 secs or less and transfer to a serving plate.

Garnish with dried parsley and parmesan cheese and serve hot.

We can add prawn or mushroom to this basic pasta.
