Preparation time: 10 mins
Cooking time : 10 mins
Yields : 4 small serving cups
This is an extraordinary tasty dessert I have tried in paleo lifestyle so far.
To be honest whenever I eat any dessert or drinks without sweet / sugar I feel little upset then I will be alright thinking about the benefits beside it.
This paleo pumpkin recipe of mine was damn good. When I started eating, I felt a bit salty ( no salt added) after a tsp and the 2nd spoon ... I felt little happy of its taste and started enjoying it and completed 2 cups , the delicious kheer!!!
Must try recipe!!!
Ingredients:
100g pumpkin
250ml milk
2 Tbsp whipping cream or any fresh cream
Few strands saffron
1 tsp cardamom powder
2 tsp ghee
10 cashew nuts
Direction:
Wash, peel and grate the pumpkin.
Heat 1 tsp ghee in a small pan and sauté it until fragrance comes.
Add milk and half a cup of water and let it boil for 3-5 mins.
Meanwhile roast cashew nuts in a tsp ghee and keep aside.
Once the pumpkin get cooked, add cream and boil for a min.
Add saffron strands and roasted cashew nuts, off the heat.
